This is a pot of happiness. If you want to show someone how much you love them, make them this. This has topped That Pasta in my house, supplanting it and taking its throne after a twenty-year reign. This is serious business. I got my inspiration for this dish from Spill the Beans. I made some changes to her recipe to suit what I had on hand and I am very pleased with the results.
Gnocchi Broil
500 g gnocchi
5 strips of bacon, (cut strips crosswise into 1/2 )
1 onion, finely chopped
1 yellow pepper, finely chopped
1 clove of garlic, minced
4 fresh tomatoes, diced
1/4 cup tomato paste
1/2 cup water
handful of fresh basil
salt and pepper to taste
gouda strips to cover your baking dish
Cook bacon in a pot. When mostly done, add the onions and peppers. Cook until softened. Add the garlic, tomatoes, tomato paste, water and gnocchi. Let simmer 15 minutes, stirring occasionally to keep gnocchi from sticking. The sauce will thicken as the gnocchi cook. Add the basil, salt and pepper. Pour the lot into an oven-proof dish, add the strips of gouda over the top of the mixture and broil until the cheese is bubbly.

Similar to you, I like to cook it in a tomatoey sauce. I’ve also pan-fried it too, which is lovely – I used this recipe http://droolfactor.wordpress.com/2012/06/04/super-easy-pan-fried-gnocchi-with-tomato-bacon-and-basil/. I don’t eat it all that much but your post has reminded me that I should more often! 😉
