Bacon Burgers

We buy a side of beef every fall. We are lucky enough to have friends who raise 2 or 3 animals for family and friends, and the meat is very nice since the animals are properly raised. We often run out of hamburger though, so I have started grinding some of the less tender cuts of roast and stew meat into hamburger. As the meat is quite lean, I was pondering what I could add to make it more suitable for grilling as burgers, and came upon the notion of grinding some bacon with the beef. Flavour and fat content. Woot! Here is what I did, and I must say, they turned out nicely.

I have a meat grinder attachment for my Kitchen Aid mixer, so I used that to grind the bacon and beef. I added the seasoning, mixing the meat by hand, and formed it into loose patties to grill. The photo below is ground bacon.

1 lb. bacon, ground
4 lbs. beef, ground
2 tsp. dry mustard
2 tsp. Worcestershire sauce
1 tsp. salt
black pepper to taste

Grill until cooked and put on a burger bun with your favourite toppings like sautéed mushrooms, cheese, tomato and whatever else appeals to you. Nom, nom.

    1. Maybe it will become more popular in your area in the next few years. Grass-fed beef was never mentioned a few years ago here even though we are in the heart of ranching country, but demand for it has sky-rocketed so we can find it in a number of shops, as well as having the ability to buy directly from the producer.
