Apple Muffins

These are nice, moist muffins, with lots of apple flavour and a crumble topping.

1 1/2 cups flour
1/2 cup sugar
1 Tbsp. baking powder
1/2 tsp. salt
1 egg
1/4 cup milk
1/4 cup canola oil (or other)
1 large apple, chopped.

Topping:
1/4 cup flour
1/2 cup brown sugar
1/4 cup butter
1/2 tsp. cinnamon
Stir the flour, brown sugar and cinnamon together. Rub the butter into it until it holds together. Reserve for top of muffins.

Stir together the dry ingredients. Combine the wet ingredients and add them to the dry. Add the chopped apple. Fill greased muffin cups 3/4 full and crumble the topping over the batter. Bake in a preheated 400 degree F oven for 20-25 minutes.
