Date and Ginger Bites

  
I want to bring a little treat to our oldest daughter when we go see new her new cat this weekend. I bought a scratching post for her fur baby, but wanted a little something for her too. Since she likes dates, these are what came to mind.

1 cup Medjool dates (11 or 12, pitted)
1 cup almonds
1/3 cup candied ginger
1/3 cup coconut (for rolling)

  
Combine the nuts, dates and ginger until you get a smooth paste. Roll 1 inch balls of paste in coconut. I like to put them in paper cups to keep them from sticking together. 

   
  This is a versatile recipe. You can leave out the ginger if you don’t like it and replace it with coconut, dried apricots or use another kind of nut. Basically, whatever you have on hand or are in the mood for. They are firmer if refrigerated, softer at room temperature.
