Maple Pecan Cookies

For Canada Day, I thought I should make something with a nod to the maple tree and remembered these cookies. They are also easy to make ahead and freeze as dough. They are a sort of brown sugar cookie with maple-pecan filling rolled inside.

1/4 cup butter
1/3 cup brown sugar
1/3 cup white sugar
1 egg
1 tsp. milk
1 tsp. vanilla

1 1/2 cups flour
1/4 tsp. baking soda
1/4 tsp. salt

Filling:
1 1/2 Tbsp. maple syrup
2 Tbsp. brown sugar
1/2 cup crushed pecans

Cream the butter and sugars together. Add the egg, milk and vanilla. Stir. Combine the flour, baking soda and salt. Add to the butter mixture and stir to incorporate. Roll it out between two sheets of parchment paper, about 12 inches square. 

Remove the top layer of parchment and brush the maple syrup over top of the dough. Sprinkle the brown sugar and pecans over the top.


 Use the bottom sheet of parchment to help you roll it into a log. 


Wrap with the parchment and refridgerate for 2 hours.


 Remove from fridge and slice into 1/4 inch slices using a serrated knife. 

Place the slices on a cookie sheet lined with parchment at bake for 13-14 minutes in an oven preheated to 350 degrees F.
