New Cooks Series 2 – Shrimp Tacos

One of the reasons people cite when not cooking is that “it takes too long”. Here is a “recipe” that can be done in under 10 minutes. You can take short cuts like buying bagged coleslaw instead of grating your own. Though you pay for the privilege, it will be less expensive than any take out. I am providing two options for dressing as most people have a clear preference when it comes to mayo vs oil. I also didn’t give an amount for the seasoning because it depends what you choose to use- I used about 2 teaspoons of my blend, but if I was just using salt and pepper, I would just sprinkle some overtop until all the shrimp looked lightly covered.

Cooking is not exacting the way baking is. You can learn a technique and then change the amounts and ingredients at will. Be fearless – it will build your confidence! For example, use chicken breast or beef strips instead of the shrimp. Flavour it with something to suit the protein you are using. Fry pepper slices with your chicken and use them instead of coleslaw. Use your imagination. If it seems like it would taste good together – try it.

15-18 shrimp
1 Tbsp. butter
1/3 bag of coleslaw
2 flour tortillas
seasoning (see below)
juice of one lime
2 Tbsp. mayo OR olive oil

1. I started with frozen shrimp, so set them under cold water to thaw.

2. Mix the lime juice with the mayo or the olive oil and toss the coleslaw with it.

3. Pat the water off the shrimp and season with whatever you like – salt and pepper, garlic seasoning, citrus seasoning etc. I used a citrus/ginger/garlic blend.  Don’t be stingy with the seasoning as it is one of the primary flavours in the meal. Melt the butter in a frying pan over medium heat. Add the shrimp. Cook the first side until it is pink – 30 seconds to 1 minute depending on the heat.  Flip them over and cook the other side until it is pink too. Remove from pan. I had shrimp with tails on, so I had to pull them off before making the tacos, but you can buy them without tails if you prefer.

Add a big scoop of coleslaw to one side of a tortilla. Place the shrimp overtop. Fold the tortilla over the filled side and then fold again.  Dinner is done…
